After practicing special techniques from the Tsuji Culinary Institute in Osaka, Chef Sonie (Hirokazu Koyama) flew to Nashville, Tennessee to broaden his cooking horizons and learned more about American food culture. With his extensive culinary background, he then decided to show off his cooking skills and creative talent in Bangkok in 1994. Besides sushi, sashimi, rice bowls, the Japanese-American fusion dishes he invented, such as sushi pizza in which pizza dough was substituted by a flat layer of sushi rice and hotate truffle roll, a perfect combination of Japanese scallop and truffle oil-infused cream, are greatly admired by many young fans. The floor-to-ceiling sticker mural depicting a group of samurais gathering under the rising sun on one wall is a real eye-catching scene upon entering.
