The brand new all-day dining restaurant Peppermint (formerly known as AquaMarine) welcomes guests into nature’s embrace with sights of greenery and a healthful farm-to-table cuisine that offers the best flavours from around the world right to your plate. Located on level four, Peppermint boasts a spectacular view of the hotel’s atrium garden, as well as the iconic Marina Bay skyline, providing a relaxing ambience perfect for romantic dinners, social gatherings and corporate get-togethers. The a la carte buffet offers endless servings of wholesome local and International favourites, freshly prepared at the opened display kitchen and served to one’s table. Diners can also look forward to fresh sustainable seafood such as the juicy Oysters, sweet Tiger Prawns and succulent Mussels, as well as fork-tender beef, lamb and other culinary highlights according to each month’s gastronomical theme. To complete the dining experience, the dessert corner satiates the sweet tooth with Peppermint’s signature durian pengat and peppermint cucumber gelato with Himalayan salt, in addition to the lavish spread of cakes. With a renewed focus on conscious eating, Peppermint’s new a la carte menus include plant-based options such as Guilt-free Burger that is created with plant- based patty and served with crispy kale in oatmeal, brioche bun and hand cut fries, as well as dishes with sustainable ingredients like the pan-seared Sustainable Barramundi with Honey Soya Emulsion and Cauliflower Rice. For a taste of Singapore, diners will take to the perennial local favourites such as Singapore Lobster Laksa and Hainanese Chicken Rice. From January 2021, diners can step out to the terrace and discover our very own urban farm, where herbs, edible flowers and vegetables are grown and used as garnishes, aromatics and ingredients for food as well as drinks like tea and infused water. One can dine in a garden setting and savour the natural flavours of our fresh harvest. Peppermint is helmed by Executive Chef Chan Tuck Wai, who has more than 20 years of culinary experience under his belt. An award-winning chef with inexhaustible creativity, innovation and culinary flair, he has represented Singapore at international culinary meets and was invited as a Guest Chef at the lstana, he constantly seeks to create new and intriguing dishes while ensuring the highest quality standards Located on level 4 of PARKROYAL COLLECTION Marina Bay, Peppermint has a seating capacity of 202 diners. Wedding bookings may also be arranged at the restaurant and couples may customise a wedding menu and theme of their preference.
